Turkey & Zucchini Burgers with Yogurt Sauce and Carrot Fries
Ingredients
Turkey Burgers:
- 1lb organic ground turkey
- 2 cups zucchini coarsely grated
- 3 green onions thinly sliced
- 1 large free-range egg
- 3 tbsp chopped mint
- 3 tbsp chopped cilantro
- 4 cloves garlic
- 1 tbsp ground cumin
- 2 tsp salt
- 1 tsp cayenne pepper (optional)
- A dash of pepper
Yogurt Sauce:
- 1 Cup of Greek Yogurt
- 1 tsp grated lemon zest
- 1 freshly squeezed lemon
- 1 small garlic glove chopped
- 2 tbsp olive oil
- 1 tbsp sumac
- 1/2 tsp salt
- 1/2 tsp black pepper
Carrot Fries:
- 6-7 large carrots, sliced long
- 1 tbsp olive oil
- 4 cloves of garlic
- 1/3 cup of nutritional yeast
- 1/4 tsp salt
Process
Turkey Burgers:
- Preheat oven to 425 degrees. Heat a cast iron pan over low.
- Combine all burger ingredients in a bowl and mix with your hands. Form into 4 large burgers or 8 small burgers.
- Place a drizzle of avocado or olive oil in a hot cast iron pan and sear burgers for 1 minute on each side.
- Then place pan into 425 degree oven for about 15 minutes. If making smaller burgers, check at 8 minutes.
Yogurt Sauce:
- Combine all sauce ingredients in a bowl and whisk well to combine
Carrot Fries
- Place carrot strips in a small bowl. Drizzle olive oil over top and add spices and garlic. Toss to coat carrots evenly.
- Spread out on a pan with parchment paper and roast for 20 minutes at 425
