Nut & Seed Granola
Perfect for topping on yogurt, smoothies, or enjoying by the handful!
Ingredients
- 5 cups of nuts and seeds of choice
- 1 cup raw, unsweetened coconut flakes
- 1/2 cup flax seeds
- 1/4 cup olive oil
- 3 tablespoons melted coconut oil
- 1 1/2 tablespoon vanilla
- 1 1/2 tablespoons cinnamon
- 1 tsp nutmeg
- 1 tablespoon cardamom (more if you love cardamom)
- 1 tsp salt (more to taste)
- 1 tablespoon maple syrup (optional)
Process
- Combine all ingredients in a large mixing bowl and toss until nuts are coated with oil and seasonings.
- Spread mixture evenly on a parchment-lined sheet pan and bake at 300 (low and slow!) for 40 minutes.
Tips:
- You can use any mix of nuts and seeds you like or have on hand. Sonjaโs favorites are pumpkin seeds, pistachios, slivered almonds, and pecans.
- Optional: add 2-3 tablespoons tahini for an extra nutty flavor
- Feel free to substitute cardamom for any other spices. Pumpkin pie seasoning is great in the fall!
