French Cafe Breakfast
Create a delicious and nutritious meal with versatile components, combining greens, proteins, and optional extras like smoked salmon or avocado, dressed with olive oil and balsamic vinegar.
Ingredients
- 2 eggs (omelette or scrambled)
- 2 cups mixed greens
- 1 tbsp extra-virgin olive oil
- 1 tbsp basalmic vinegar
- 1/2- 1 cup roasted veggies
- 1-2 oz smoked salmon (optional)
- 1/2 avocado (optional)
- 1/4 cup roasted potatoes kimchi or cheese (optional)
Process
- Place greens in a small bowl. Dress with oil and vinegar and a sprinkle of sea salt. Toss well to coat.
- Place on a plate and add your eggs and roast veggies.
- Add any extras- we like smoked salmon, avocado, and an organic cheese.
Tip:
We like all the roasted veggies. Some great choices include onions, mushrooms, peppers, green beans, etc.
