Errol’s Salad
Ingredients
Salad
- 2 handfuls mixed greens
- 2 handfuls arugula
- 1/2 bunch green onions
- 1 avocado peeled and sliced
- 1/4 cup pumpkins seeds
- grated parmesan
Dressing
- 1/2 lemon
- 4 tbsp extra virgin olive oil
- 2 gloves crushed garlic
- 1/2 tsp dijon mustard
- salt and pepper to taste
Process
- Toss all salad ingredients together, leaving a small amount of pumpkin seeds and green onions aside as a pretty topping.
- Mix together dressing quickly with a whisk until it emulsifies and looks opaque.
- Drizzle dressing over greens and toss.
- Sprinkle remaining pumpkin seeds and onions on top and serve.
