Curry Chicken Salad
Ingredients
- 1 lb cooked and shredded chicken breast
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 1/4 cup chopped almonds or cashews
- 1/4 cup shredded carrot
- 2 tbsp dried unsweetened currants or cranberries
- 1/4 cup chopped fresh cilantro
- 1/4 cup avocado oil mayonnaise
- 1/4 cup full fat plain Greek yogurt
- 3 tbsp curry powder
- 1 tsp chili power
- 1 tbsp lemon juice
- Salt and pepper to taste
Process
- In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, curry powder, lemon juice, salt, and pepper until smooth.
- Add the shredded chicken, celery, red onion, nuts, carrot, and cilantro to the bowl and toss to coat evenly with the curry dressing.
- Taste and adjust seasoning as needed.
- Serve as is with flackers, or wrap in lettuce leaves
Tips:
- Chili powder is optional- feel free to leave out to decrease the spice
