Chia Yogurt Parfait
Ingredients
- 3 tbsp chia seeds
- 1 cup unsweetened Greek Yogurt
- 1/4 cup fresh berries
- 1/4 cup grain-free granola or chopped nuts and seeds
Process
- In a mason jar, stir chia seeds and Greek yogurt until well combined.
- Cover the bowl and refrigerate the mixture for at least 4 hours, or overnight, to allow the chia seeds to thicken the yogurt
- After refrigeration, give the chia yogurt mixture a good stir to break up any clumps and ensure a smooth consistency.
- To assemble the parfait, alternate layers of the chia yogurt mixture with layers of fresh berries or other desired toppings in serving glasses or bowls.
- Repeat the layering process until all the ingredients are used, finishing with a layer of berries or toppings on top.
Tips:
- You can add a splash of unsweetened almond milk after refrigeration to thin the consistency
- For a dairy-free option, sub a no sugar added coconut yogurt. You may want to add collagen peptides or another protein powder for added protein
- This is a great option while traveling as well. Pick up a single serving of yogurt and add 2-3 tbsp of chia seeds. Keep in a hotel mini fridge for an easy, high fiber breakfast on the go.
