Blanched Green Beans with Dukkah

Process

  1. Prepare your dukkah (recipe here). If it hasn’t been toasted yet, warm it in a saucepan on medium heat until fragrant (about 5 min) stirring occasionally.
  2. Bring 2 quarts of water + a pinch of salt to a boil on the stove. Fill a large mixing bowl with filtered water and a couple ice cubes and set aside.
  3. Add green beans to boiling water and simmer for 2 minutes, removing promptly. Drain them then immediately place hot beans in the bowl of ice water, moving them around to cool them quickly. Drain and place green beans in the freezer for up to 5 minutes. (This makes them extra crisp/crunchy.)
  4. Remove from freezer and plate, drizzling with good extra virgin olive oil and topping with the warm dukkah. Enjoy!
