Avocado, Radicchio and Endive Salad
Wanting to mix up your salads? Try radicchio and endives, they are high in fiber and antioxidant rich!
Ingredients
Serving = 2 servings
Salad
- 3 endives
- 1 radicchio
- 2 avocados
- 1/2 cup shaved Parmesan cheese
Dressing
- 1 avocado
- 1/4 cup fresh lemon juice
- 1/2 tsp pepper
- 1 tsp salt
- 1/4 cup olive oil
- 2 tbsp fresh basil
- 1 tsp dijon mustard
- 3 cloves minced garlic
- water
Process
- Chop endives, radicchio and 2 avocados in 1” cubes. Add all to a bowl breaking up the endives as you go.
- Add all dressing ingredients to blender and pulse until smooth. Add water to reach your desired consistency.
- Drizzle dressing over the salad and mix to coat. Finish with shaved Parmesan cheese.
Tips:
- Serve with grilled shrimp or grilled chicken for a hearty meal.
