Greek Chopped Salad
Ingredients
- 1 bag of arugula or chopped romaine
- 2 medium tomatoes, diced
- 1 medium cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1/2 cup pitted kalamata olives
- 2 oz feta cheese, crumbled
- 8-10 mint leaves
- 1/4 cup chopped parsley
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 clove of garlic
- 1/4 tsp dijon mustard
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
Process
- Add the diced tomatoes, cucumber, bell pepper, thinly sliced red onion, and pitted kalamata olives into a mixing bowl.
- Crumble the feta cheese and add fresh herbs to the bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic, dijon mustard, salt, and black pepper to make the dressing.
- Drizzle the dressing over the chopped veggies and cheese. Add romaine or arugula and toss well to coat everything.
Tip:
