Chopped Avocado Chicken Salad
Ingredients
- 2 cups cooked chicken, diced
- 2 avocados, peeled and diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper, to taste
Optional add-ins:
- 1/2 red onion, diced
- 1/2 red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup mango, diced
- 1/2 black beans
- Smoked paprika
- Cumin to taste
Process
- In a large bowl, combine the chopped chicken, avocado, and cilantro.
- Squeeze the lime juice over the salad and toss to combine. Add more if needed to minimize browning. (This happens over time in storage and itβs totally fine- just not as pretty)
- Add any optional add-ins. My favorites are red onion and mango with cumin.
- Season with salt and pepper to taste. Enjoy on a bed of greens or on itβs own!!
- Serve immediately or refrigerate until ready to serve.
Tips:
- This recipe is great for using up any leftover roast or rotisserie chicken and keeps well for lunches or snacks through the week.
